E Coli: How To Protect Yourself

Dear Health-Minded Readers,
Recently in the news we heard of what the World Health Organization called the 'world's largest E.coli outbreak' in Germany, France and other parts of Europe. The outbreak affected mostly bean and seed sprouts, lentils and adzuki beans and there were several fatalities from it.
Fortunately, that particular E.coli outbreak did not affect the United States. However, from time to time, E.coli contaminations of food do break out across the United States, particularly in the warmer weather months. In fact, just last month there was an outbreak of E.coli in hazelnuts that spread across 3 states!
The truth is, you have to be very careful with the hygiene of your food. Many of my patients who have heard the news of these outbreaks have asked me how they could protect themselves against a possible E.coli contamination of their food. It's not difficult and really only takes a little extra effort on your part to make sure you don't become ill from possible E.coli contaminated foods.
Protecting Yourself From E.Coli
E.coli contaminations occur when food comes in contact with feces, either animal or human, somehow. Most often, people associate E.coli contaminations with meat but other foods, like all types of produce, can also become contaminated by exposure to feces somewhere along the processing route. As I tell my patients, learning how to properly store and cook your food is the best hedge against possible unknown E.coli contamination of your food. Here is my advice:
Cook At Proper Heat: Cooking meats, poultry and fish to the proper temperature will kill any possible E.coli bacteria that may be present. Cook all red meat to a temperature of 160 degrees (need a food thermometer). Cook all white meat (poultry like chicken, turkey) and fish to 180 degrees. Watch for undercooked meats in restaurants, be wary ordering rare meats.
Buy Them Last: When grocery shopping, buy your meat, fish and poultry last. Don't put it in your cart and walk around the store while browsing other items to buy. This gives your meat a chance to thaw and bacteria to grow before you leave the store.
Thaw Them Carefully: Do not try to thaw meats at room temperature quickly, especially in warm weather. Let them thaw slowly in the refrigerator on the higher shelves. Or, you can thaw quickly in a microwave if you are going to cook it immediately.
Keep it Cool: Similarly, if you have a long trip home from the grocery store and it's a warm day, you might want to consider having a small portable cooler set up in the backseat or trunk with ice in it where you can put your meat and poultry to keep it frozen on the way home. Also, turn your AC up a little cooler for the ride home.
Food storage: Make sure your refrigerator/freezer is cold enough. Measure the temperature to be sure your refrigerator is 41 degrees as E.coli (and other bacteria) can start growing at 45 degrees. If you plan on eating your meat or poultry later that day or the next morning, be sure to store it on the lower shelves of your refrigerator where it is colder.
Keep Counters Clean: When preparing meat, poultry on your countertop, be sure to wipe your counter clean with a disinfectant wipe and then rinse and let it air dry before preparing raw meat on it. Or, use a large, clean cookie sheet to prepare meat.
Clean Your Produce: Be sure to use a vegetable scrubber and/or produce wash to get rid of any bacterial remnant that may have gotten on produce during processing and/or shipping. You can make your own produce wash by using equal parts clean water and white vinegar, enough to cover your produce completely, and place your fruits and vegetables in the solution for 15 minutes. Scrub the skins of the produce (this is not possible to do with lettuce, and other leafy produce) with a scrubber. Be sure to rinse the produce well before preparing.
Watch Raw Foods: Although many people like to eat their produce raw to retain more vitamin content, this can add to the risk of a possible bacterial contamination. Steaming at a high temperature can help to kill bacteria and not lessen vitamin content.
Wash your hands! Simply washing your own hands with hot water and an antibacterial soap will prevent you from possibly transferring E.coli bacteria to your food.
E. Coli Contamination Symptoms
Now that we've talked about how to protect yourself from an E.coli contamination of your food, you need to know the symptoms of E.coli contamination. Children, and possibly very elderly people, are more likely to get an E.coli infection simply because of difficulty enforcing hygiene especially after toileting. However, anyone, of any age, can get an E.coli infection. Below are some common symptoms:
  • Stomach cramps and pain.
  • Diarrhea - could start off watery and then become very bloody.
  • Vomiting.
E. coli contamination symptoms usually rid themselves from the body within a few days to a week by drinking plenty of fluids and staying away from heavy foods. However, complications can arise from blood loss and/or dehydration such as kidney damage. Please seek medical attention if your diarrhea/vomiting symptoms are severe and you feel weak, have heart palpitations and do not show signs of improvement after 3 days.

Diet for Chronic Pancreatitis - Prevent Inflammation of the Pancreas

Pancreatitis is a condition in which the pancreas, which produces enzymes and hormone insulin for digestion suffers from inflammation which reduces the capacity of pancreas to absorb nutrition from the food products and provide it to body. The condition can be either acute or chronic, and it can cause bleeding in the region close to the pancreas. Chronic pancreatitis can be caused by excess intake of alcohol and the predominant symptom of the condition is presence of oil in stool. It can cause severe medical conditions such as blockages in intestine, fluid collection in pancreas, diabetes, mal-absorption and malnutrition.
Surgeries and drug therapies is given for the treatment of pancreatitis and in severe cases it can be life threatening. Regular exercises and staying way from stress is helpful in recovering from medical illness.
Following items can be included in diet
1. Drink a good amount of water in the day.
2. One can take herbal drinks such as green tea, tea made from holy basil or holy basil extract can be taken.
3. Rhodiola(Rhodiola rosea), Reishi mushroom (Ganoderma lucidum) and Indian Gooseberry (Emblica officinalis) should be taken every day as it is high in antioxidants. It is richest source of vitamin C. According to research on animals it has been found effective in treating pancreatitis.
4. Grape seed extract can be taken to improve antioxidants in body.
5. Ginger root (Zingiber officinale) is also high in antioxidant and it can be taken in green tea.
6. Asian ginseng (Panax ginseng) and Cinnamon Chinese bark (Cinnamomum verum) are commonly used in various cuisine preparations and it is effective in treating pancreatitis.
7. Food high in iron and vitamin B should be taken such as green leafy vegetables and sea vegetables.

Vitamin K and Bones

I read an interesting discussion concerning Vitamin K2 and bones the other day that reminded me again of the confusion that surrounds Vitamin K. There are several forms of Vitamin K (Vitamin K1, Vitamin K2 and Vitamin K3).
Most people have heard about Vitamin K1 and its importance for helping hemophiliacs avoid bleeding to death. This may lead you to believe that if you take Vitamin K, your blood might clot. The good news is that though Vitamin K1 does help stop the bleeding for a hemophiliac, it does not cause clotting.
Now that we have that out of the way, what I really want to focus on is Vitamin K2 - which also has 2 forms-MK-4 and MK-7. MK-4 is the natural form - and is most easily absorbed.
In recent years there has been a lot of research on the other forms of Vitamin K. Also, there is a vast difference between the synthetic man-made Vitamin K3 and the natural Vitamin K2 which is recommended for bones as well as heart health.
In the bone, Vitamin K2 -the MK-4 form, has been shown to decrease fractures and has been approved by the Ministry of Health in Japan since 1995 for prevention and treatment of osteoporosis. It has been demonstrated to decrease fractures up to 87%!
Sadly Vitamin K2 therapy has not been approved by our FDA for osteoporosis treatment. Instead they continue to approve the dangerous bisphosphonate drugs even after ordering a warning on the label that those drugs contribute to brittle bones - in October 2010.
Isn't it interesting to note that Japan has a much lower incidence of osteoporosis than the United States & the UK where bisphosphonates are the standard treatment?
Vitamin K2 helps to carry calcium to the bones where it is needed. But a lack of Vitamin K2 allows the calcium to be deposited in the arteries and other soft tissue causing hardening of the arteries and many other cardiac problems as well as osteoporosis.
The sad part of this scenario is the widely prescribed use of coumadin which completely destroys Vitamin K2. Many doctors prescribe this drug for seniors, in spite of the well-known side-effects, while at the same time they encourage their patients to take large amounts of calcium.
That combination produces hardening of the arteries (or arterial calcification) and heart problems as well as osteoporosis.
Some Vitamin K2 could be produced by certain bacteria in the intestines but the abuse of antibiotics in our country prevents this from happening. You see, the good Vitamin K2 producing bacteria in the intestines are destroyed by the antibiotics along with the bad bacteria.
I am happy to learn that an increasing number of physicians have begun to integrate nutritional and supplement therapy into their practices to provide their patients with remedies and preventive measures for coping with some of these serious conditions without side effects.

The ABC of Bone Marrow Transplant

Bone Marrow transplantation is a relatively new medical procedure where stem cells from the bone marrow are taken out and filtered to be given back either to the same person or another person. Now we come to the basic question: why BMT? In patients with any of the diseases mentioned above, either a large number of defective or immature blood cells are produced (in the case of leukemia), or there is an exceedingly low blood count (in the case of aplastic anemia). These defective blood cells accumulate in the blood cell and interfere with their function, or even invade other tissues. These abnormal blood cells can be destroyed by large doses of radiation or chemotherapy, which can even destroy normal blood cells in the bone marrow. A bone marrow transplant can be used by the doctors to treat abnormal blood cells with radiation and replace the damaged bone marrow with new one. Even though, BMT does not guarantee against recurrence of the disease, but can help the patient enjoy a healthier life for a prolonged period of time.
A transplant of any sorts is accompanied with several complications and is a harrowing experience to say the least. For a BMT, a patient has to be physically and mentally healthy enough to undergo the rigors of this complicated procedure.
